Cheesy Pesto Baked Chicken Recipe

Happy March! Today I thought I would switch gears a bit and throw one of my favorite easy recipes at you. This week for meal prep I made angel hair pasta (nothing special) and cheesy pesto baked chicken! It turned out incredible! It's very easy to prep for and has only 4 ingredients. 

Ingredients:
3 chicken breasts
8oz of cream cheese
1/3 cup of basil pesto
Shredded mozzarella cheese
 
Directions:
First you want to mix your cream cheese and pesto. Once it is combined, evenly spread it over your chicken. After you have used all of your pesto mixture, put as much mozzarella cheese as you want on top to cover each chicken breast completely, you can never have too much. Bake for 30-40 minutes at 375.

  1. Wow this looks tasty! I appreciate that you shared a recipe with only four ingredients sometimes when looking up recipes online the ingredients list can be long and costly. The four ingredients: chicken, cream cheese, basil pesto and mozzarella are also food items that I could see myself easily incorporating into other dishes or snacks. I could use the left over cream cheese for bagels and I could easily use the basil pesto and mozzarella with noodles. Noodles that I already have in the cabinet SCORE! I think you really thought of your audience with this post from being cost effective and a simple recipe.

Changing My Mindset

      A lot has happened in the past year. At a glance, I might be compelled to rattle off all the terrible things that have happened in my life, in my family and friends lives, in the country, and even the world. That is all I have focused on. While some of those things might be a topic of a blog post in the future, that doesn't mean I am back tracking and going back to a negative mindset. Speaking with a Hollywood Producer

     Last night I had the pleasure of being invited to a zoom meeting with Big Brother producer Don Wollman. Wow, it was an incredible experience hearing about his life and getting advice from someone so successful. We started out the night meeting in the GCC with Chris Marsh, an amazing COM professor. After that we all split up into different rooms so we wouldn't have to be masked and hopped on zoom. Within a few minute, Mr. Wollman hopped on the zoom call live from Los Angeles.
